Bill’s Bar – Collingwood
I think one of the main criteria of a great small bar is that is should be (somewhat) of a challenge to initially locate. This sense of ‘location obscurity’ adds a degree of mystique, and adventure to the drinking experience. Hidden away, in plain sight, on Collingwood’s Smith Street, Bill’s Bar definitely ticks this box.
Owned by the same team behind Huxtable Restaurant, and Huxtaburger, Bill’s Bar is located in the building adjacent Huxtaburger, and here-in lies the secret. Embracing the speakeasy influence, you enter Bill’s via a non-descript, hidden, one-way mirrored door (located behind the serving counter of Huxtaburger).
Once inside, the dimly lit interior of Bill’s is relaxed, with full-height angular timber wine shelves, long tan, and mint green leather banquettes, and lashings of natural wood finishes. The bar proper has a grey, diamond motif, which is a delicate homage to the black & white checked tiles in Huxtaburger.
Bill’s is all about fabulous drinks that are ‘premium but affordable’. You can expect single malts, aged rums and several notable tequila’s – all priced at house pour prices. This philosophy also extends to their wine list, with an Enomatic (automated pouring) system, that allows punters to experience an array of 1/2 and full glass-pours at affordable prices.
Foodwise, you can expect, fancy hotdogs, southern fried chicken ribs,pulled pork buns, and of course gourmet burgers – all fresh from the grill next door @ Huxtaburger.
