Owned, and operated, by award-winning bar manager/mixologist – Michael Chiem (ex-Black, Sokyo, Bulletin Place and currently Cliff Dive). PS40 is a unique 60 patron venue located on the lower-ground floor, of a heritage listed Federation warehouse, in the heart of Sydney on Skittle Lane (off King Street).

PS Soda is an independent company, that was started in early 2015 by ex-Bulletin Place bartender Thor Berquist, his wife Livia Lima and Chiem. The company specialises in creating unique, hand-crafted sodas, that are inspired by boutique cocktails, and culinary techniques.

Using local, and native, Australian ingredients, P.S. soda’s are designed to complement spirits, but also taste great as stand-alone beverage. P.S. currently offers four flavours – Wattle Cola, Bush Tonic (which uses Gentian as the bittering agent instead of Quinine, native lemongrass, lemon myrtle, and a dash of honey), Blackstrap Ginger Beer (which makes a Dark & Stormy out of any rum), and Grapefruit + Gentian. All of the boutique soda’s are available from the eight-taps behind at the bar at PS40.

The modern interior of the bar tastefully embraces the Federation heritage of the building, with tessellated tiles, exposed brick & sandstone walls, steel framed windows, and timber floors/beams.

There’s a compact selection of bar snacks available, including Macadamias with lemon myrtle dukkah and olive oil ($7), 2 choices of cheese served with Lavosh & an in house carrot, orange & ginger jam ($16) or Vietnamese pork terrine sandwich, house pickles, chilli, coriander and shredded pork ($12).
